Ziti with Roasted Butternut Squash Sauce (Ziti con Zucca Arrostita)

Ingredients

3 cupsbutternut squash, peeled, seeded, diced
to tastesalt
to tastefreshly ground black pepper
1/2 cupwalnut halves
3 clovesgarlic, peeled
3 sprigs plus 1 teaspoonthyme, chopped, divided
1/4 cupextra virgin olive oil
1/4 cupnon-fat heavy cream
3/4 cupchicken broth
1 box (16 ounces)Barilla Ziti
2 tablespoonsParmigiano cheese, freshly grated


PREHEAT oven to 400F.
BRING a large pot of water to a boil.
ADD butternut squash, garlic cloves, 3 thyme sprigs, and olive oil to a large bowl. Toss and season with salt and pepper. Transfer to a baking sheet.
BAKE 30 minutes or until tender and golden. Remove and let cool.
SAUTE walnuts in a small skillet for 1-2 minutes or until lightly golden. Let cool; chop and set aside.
HEAT chicken broth in a small saucepan.
PUREE squash mixture in food processor. Add cream and add chicken broth; process until smooth. Season with salt and pepper to taste and set aside.
COOK pasta according to package directions. Drain, reserving 2 cups of pasta cooking water. Return pasta to pot.
ADD sauce mixture, walnuts and parmesan cheese to pasta and mix well. Add pasta cooking water to thin as desired.
TRANSFER to a serving platter, top with chopped thyme
