Ziti with Italian Sausage and Escarole (Ziti con Salsiccia e Scarola)

Ingredients

1 poundItalian sausage, crumbled
3 tablespoonsextra virgin olive oil
3 clovesgarlic, minced
1 tablespoonflour
1 cuphalf & half
1 cupdry white wine
1 teaspoonfresh rosemary, chopped (may substitute 1/2 tsp. dried rosemary for fresh)
1/2 teaspoonsalt
1/2 teaspoonfreshly ground black pepper
1 large headescarole (8 oz.)
1 box (16 ounces)BARILLA Ziti
1/4 cupfresh parsley, chopped
3/4 cupfreshly grated Parmigiano Reggiano cheese


COOK sausage in large skillet over medium-high heat 6 to 7 minutes or until cooked through, stirring occasionally. Drain; remove sausage from skillet and set aside.
HEAT oil in skillet over medium heat; sauté garlic 2 minutes, stirring occasionally. Stir in flour; continue cooking 2 minutes.
ADD half and half, wine, sausage, rosemary, salt and pepper. Continue to stir until sauce comes to a simmer.
ADD escarole and continue cooking 5 minutes or until escarole wilts, stirring frequently.
COOK Ziti according to package directions. Drain, reserving 1 cup of pasta water. Return pasta to pot.
ADD sausage mixture and cheese to hot Ziti. Toss, adding reserved pasta water to desired consistency. Transfer t
