Ziti with Italian Sausage and Escarole (Ziti con Salsiccia e Scarola)

Ingredients
| 1 pound | Italian sausage, crumbled | | 3 tablespoons | extra virgin olive oil | | 3 cloves | garlic, minced | | 1 tablespoon | flour | | 1 cup | half & half | | 1 cup | dry white wine | | 1 teaspoon | fresh rosemary, chopped (may substitute 1/2 tsp. dried rosemary for fresh) | | 1/2 teaspoon | salt | | 1/2 teaspoon | freshly ground black pepper | | 1 large head | escarole (8 oz.) | | 1 box (16 ounces) | BARILLA Ziti | | 1/4 cup | fresh parsley, chopped | | 3/4 cup | freshly grated Parmigiano Reggiano cheese |
COOK sausage in large skillet over medium-high heat 6 to 7 minutes or until cooked through, stirring occasionally. Drain; remove sausage from skillet and set aside. HEAT oil in skillet over medium heat; sauté garlic 2 minutes, stirring occasionally. Stir in flour; continue cooking 2 minutes. ADD half and half, wine, sausage, rosemary, salt and pepper. Continue to stir until sauce comes to a simmer. ADD escarole and continue cooking 5 minutes or until escarole wilts, stirring frequently. COOK Ziti according to package directions. Drain, reserving 1 cup of pasta water. Return pasta to pot. ADD sausage mixture and cheese to hot Ziti. Toss, adding reserved pasta water to desired consistency. Transfer t
