Ziti with Butternut Squash , Chicken, Sage and Pine Nuts (Ziti con Zucca, Pollo, Salvia e Pinoli)

Ingredients

1/2 cuppine nuts
5 tablespoons, dividedextra virgin olive oil
3 sprigs, dividedsage
1/2 cupshallots, chopped
1 poundboneless, skinless chicken breast
2 pounds (1 medium)butternut squash, peeled, seeded, cut into 1/4 inch pieces
3/4 cupchicken broth
to tastesalt
to tastefreshly ground black pepper
1 box (16 ounces)BARILLA Ziti


BRING a large pot of water to a boil.
SAUTE pine nuts lightly in a large skillet. Remove and set aside.
ADD 2 sage sprigs and shallots; saute 3-4 minutes or until tender.
ADD chicken, season with salt and pepper. Saute chicken until chicken is cooed through and tender. Remove sage. Remove chicken and set aside.
ADD remaining olive oil to skillet.
ADD squash, season with salt and pepper; saute 1-2 minutes.
ADD broth, reduce heat to medium low, cover and simmer for 9-10 minutes or until squash is tender.
COOK pasta according to package directions. Drain and add immediately to skillet.
ADD pine nuts, chicken and cheese.
TRANSFER to a serving platter or bowl; drizzle with additional olive oil and garnish with additional sage leaves
