Vegetable Carpaccio Salad (Insalata di Verdure Fini)

Ingredients

½ poundzucchini
½ poundyellow squash
½ poundarugula, stems removed, leaved torn
½ cupParmigiano cheese, grated, divided
3 tablespoonsextra virgin olive oil, divided
1-¼ teaspoonsalt
to tastefreshly ground black pepper


CUT zucchini and yellow squash crosswise into paper thin slices. Toss slices with 1 teaspoon salt in a large colander over a bowl for 20 minutes. Rinse slices and drain in colander.
TOSS arugula with half of the oil and half of the cheese in a large bowl.
ADD vegetable slices to arugula. Add remaining oil and cheese. Season with peppe
