Turkey Cutlets with Parmesan Herb Crust (Cotolette di Tacchino con Panatura alle Erbe)

Ingredients

2/3 cupfresh breadcrumbs
1/2 cupParmigiano cheese, grated
1 tablespoonfresh parsley, chopped
1 tablespoonfresh basil, chopped
1 teaspoonmarjoram, chopped
1egg, large
4turkey cutlets
4 tablespoonsextra virgin olive oil


COMBINE breadcrumbs, cheese and herbs together on a large plate or pie pan.
WHISK egg in small shallow bowl
COVER turkey cutlets with plastic and pound to ½ inch thickness with a meat mallet.
Season cutlets with salt and pepper. Brush cutlets with egg on both sides and dredge in breadcrumbs on both sides
HEAT oil in large skillet over medium heat.
ADD turkey and cook 4 minutes per side or until golden brown and cooked through
