Tri-Color Fiori Salad with Vegetables (Insalata di Fiori Tricolore con Verdure)

Ingredients

1 box ( 12 ounces)BARILLA Tri-Color Fiori
2 cupsbroccoli florets
1/4 cupbalsamic vinegar
3/4 teaspoonsalt
1/8 teaspoonfreshly ground black pepper
1/8 teaspoonred pepper flakes, crushed (optional)
3/4 cupextra virgin olive oil
1 cupcarrots, shredded
3/4 cupfresh basil, divided, chopped
3/4 cupred pepper, finely chopped and divided
3/4 cupfresh Parmigiano cheese, grated
1/2 cupthin green onions, sliced


COOK Fiori according to package directions, adding broccoli during last minute of cook time. Drain and set aside.
WHISK together vinegar, salt, pepper and red pepper flakes in large bowl to prepare dressing . Continue whisking while slowly adding olive oil.
COMBINE pasta with broccoli and dressing.
ADD carrots, 1/2 cup basil, 1/2 cup red pepper, Parmigiano cheese, and green onions; mix well.
GARNISH with remaining 1/2 cup basil and 1/4 cup red pepper



Substitute green or yellow pepper for red.
