Three Cheese Tortellini with Mushrooms
Tortellini ai Tre Formaggi con Funghi

Ingredients

1 packageBARILLA Three Cheese Tortellini
1 poundfresh mushrooms, sliced
1 tablespoonextra virgin olive oil
1 tablespoonbutter
1 clovegarlic, chopped
1 tablespoonparsley, chopped
1/3 cupParmigiano cheese, grated
to tastesalt
to tastefreshly ground black pepper


BRING a large pot of water to a boil.
HEAT the oil and butter in a large skillet over medium heat.
ADD the mushrooms, sauté for a few minutes over high heat until nice and golden. Season with salt and pepper.
COOK the Tortellini according to the package directions.
DRAIN the Tortellini and toss with the mushroom sauce in the skillet. Garnish with the chopped parsley and grated cheese before serving.
