Three Cheese Tortellini with Italian Sausage and Portobello Mushrooms (Tortellini ai Tre Formaggi con Funghi e Salsiccia)

Ingredients

2 tablespoonsextra virgin olive oil
2 wholeshallots, finely chopped
1 poundItalian sausage, crumbled
1 cup (8 ounces)portobello mushrooms, sliced thin
1 cuphalf & half
1 package (13 ounces)BARILLA Three Cheese Tortellini
1/2 cupParmigiano cheese, freshly grated
2 tablespoonsfresh parsley, chopped


BRING a large pot of water to a boil.
HEAT olive oil in a large skillet over medium high heat. Add shallots and saute 3-5 minutes or until translucent.
ADD sausage and mushrooms; continue cooking for 5-7 minutes or until sausage is cooked through.
ADD half and half; simmer an additonal 2 minutes. Set aside.
COOK pasta according to package directions. Drain and immediately add hot pasta to sauce and toss gently.
TRANSFER to a serving platter or bowl. Sprinkle with cheese and garnish with chopped parsle
