Three Cheese Tortellini with Creamy Roasted Red Pepper Sauce (Tortellini ai Tre Formaggi con Salsa ai Peperoni Arrostiti)

Ingredients

1 jar (7 ounces)roasted red peppers, drained
2 tablespoonsextra virgin olive oil
2 cloves (1/2 teaspoon)garlic, minced
1 cupprepared alfredo sauce
1 package (8 ounces)BARILLA Three Cheese Tortellini
2 tablespoonsfresh parsley, chopped


BRING a large pot of water to a boil.
PUREE peppers in a food processor or blender; set aside.
HEAT olive oil in a large skillet. Add garlic and sauté over medium-low heat for 2 minutes. Stir in pepper puree and alfredo sauce. Continue cooking for 10 minutes, stirring occasionally.
COOK Tortellini according to package directions. Drain.
ADD parsley to sauce mixture. Combine Tortellini with sauce and serve
