Three Cheese Tortellini with Butternut Squash and Italian Sausage (Three Cheese Tortellini al Tre Formaggi, Zucca e Salsiccia)

Ingredients

1/4 cupextra virgin olive oil
1medium butternut squash, peeled, seeded and cut into 1/2-inch cubes
1/2 poundmild Italian sausage
1/2 cupchopped white onion
1garlic clove, minced
2 teaspoonchopped fresh rosemary leaves
1 teaspoonchopped fresh sage leaves
1 package (8 ounces)BARILLA Three Cheese Tortellini
1/2 cupwhite wine
1 jar (17 ouncesBARILLA Restaurant Creations Sugo alla Romano
1/2 cuphot water, divided
1/3 cup (1-1/2 ounces)provolone cheese, cut into small cubes


HEAT oil in large skillet over medium-high heat. Add squash; cook 18 to 20 minutes or until lightly browned and tender, stirring occasionally. Drain and set squash aside.
ADD sausage to same skillet. Cook over medium heat for 2 minutes, breaking sausage into small chunks with a wooden spoon. Add onion, garlic and herbs; cook 5 minutes or until onion is tender, stirring occasionally.
MEANWHILE, cook Tortellini according to package directions; drain.
ADD wine to skillet. Continue cooking about 8 minutes, or until wine is completely reduced. Add both jars of Restaurant Creations. Rinse each jar with ΒΌ cup of hot water to remove all sauce, and stir into skillet. Add squash and cheese; continue cooking 2 to 3 minutes to heat thoroughly. Stir sauce into hot Tortellini; toss.
TRANSFER to a serving platter or bowl



Substitute 1 teaspoon dried rosemary leaves and 1/2 teaspoon dried sage for fresh herbs.
