Spaghetti Rigati with Creamy Green Sauce (Spaghetti Rigati con Salsa Verde Cremosa)

Ingredients

2 cupsfresh spinach leaves
1 cupfresh basil leaves
1/4 cuppine nuts
4 clovesgarlic
1-1/2 teaspoonssalt, divided
1/3 cupextra virgin olive oil
1 box (16 ounces)BARILLA Spaghetti Rigati
3/4 cuphalf & half
1/4 teaspooncayenne or red pepper
1/4 cupfreshly grated Parmigiano Reggiano cheese
1/2 cuphalved cherry tomatoes (optional)


COMBINE spinach, basil, pine nuts, garlic and ½ tsp. salt in a blender or food processor; mix well. Gradually add oil, blending until mixture is thick. Set aside.
COOK Spaghetti Rigati according to package directions; drain and return to pot.
ADD pesto sauce, half & half, 1 tsp. salt and cayenne pepper to hot Spaghetti Rigati; toss.
TRANSFER to serving platter; sprinkle with cheese. Garnish with cherry tomatoes, if desired



Add your favorite cooked meat or fish for heartier version.
