Rotini with Broccoli (Rotini con Broccoli)

Ingredients

1/8 teaspoonred pepper flakes, crushed (optional)
1 box (16 ounces)BARILLA Rotini
1 bunch (1-1/4 pounds)broccoli
1/3 cupextra virgin olive oil
1 can (2 ounces)flat anchovy filets in oil, undrained
1 clovegarlic, minced


CUT florets off broccoli. Slice top halves of stalks into thin pieces; discard bottom portions.
HEAT oil in skillet over medium heat. Add anchovies, garlic and crushed red pepper. Cook 6 to 7 minutes or until anchovies break apart, stirring frequently. Stir in salt.
COOK Rotini 6 minutes, adding broccoli during last two minutes of cook time. Drain, reserving 2 cups of pasta water.
ADD pasta and broccoli to skillet. Turn heat to medium-high; continue cooking pasta about 4 minutes, adding enough of the reserved water to obtain the desired consistency. Transfer to serving platter. Makes 6 to 8 servings



Sprinkle with freshly grated Parmesan cheese.
