Rotini Salad with Fresh Vegetables (Insalata di Rotini con Verdure Fresche)

Ingredients

1 box (16 ounces)BARILLA Rotini
1/2 cupextra virgin olive oil
1/4 cuplemon juice
1/2 teaspoonsalt
1/2 teaspooncrushed red pepper flakes (optional)
2 tablespoondrained capers
2 cups (12 ounces)quartered cherry tomatoes
3/4 cupkalamata olives, pitted, cut into slivers
2 cans (6 ounces each)tuna, drained and flaked
1 cupfinely chopped fresh basil leaves
1/2 cupfinely chopped parsley
1 cupfinely chopped red onion
1/2 cupfreshly grated Parmigiano cheese


COOK Rotini according to package directions. Reserve 1/2 cup of the pasta cooking water and set aside. Drain pasta and return to pot.
PREPARE dressing combining olive oil, lemon juice, reserved pasta water, salt and pepper flakes in a small bowl ; mix well and set aside.
COMBINE remaining ingredients, pasta, and dressing in a large bowl; toss gently. May be served warm or cold
