Roasted Asparagus with Parmesan Cheese (Asparagi Gratinati con Cipolla e Parmigiano)

Ingredients

1 poundfresh asparagus
½ largeyellow onion, sliced
2 tablespoonsextra virgin olive oil
½ cupParmigiano cheese, grated
to tastesalt
to tastefreshly ground black pepper


PREHEAT oven to 350 Degrees
CUT 1 inch off the bottom of the Asparagus. In a large pot bring 2 quarts of water to a boil. Blanch Asparagus for 1 minute, drain and shock in cold water.
HEAT skillet with olive oil over medium heat.
ADD onions to skillet and sauté for 4 minutes
COMBINE asparagus and onions in a baking dish. Season with salt and pepper sprinkle with grated cheese.
BAKE for 10 minutes
