Ricotta and Spinach Tortelloni with Saffron and Parmigiano Cheese
Tortelloni Ricotta e Spinaci con Zafferano e Formaggio Parmigiano

Ingredients

1 package BARILLA Ricotta & Spinach Tortelloni
1/4 cupextra virgin olive oil
1/2 cupwhite onion, chopped
3 cupsheavy cream
pinch (to taste)saffron
to tastesalt
to tastefreshly ground black pepper
1 cupParmigiano cheese, grated


BRING a large pot of water to a boil.
HEAT olive oil in a large skillet. Add onions and sauté until golden.
ADD heavy cream; heat to simmer.
ADD saffron and simmer for 5 minutes. Season with salt and pepper.
COOK Tortelloni according package directions. Drain.
ADD pasta to sauce. Add parmigiano cheese and mix well.
