Porcini Mushroom Tortelloni with Salmon (Porcini Tortelloni al Salmone)

Ingredients

3/4 poundfresh salmon, skin removed
3 tablespoonsextra-virgin olive oil
2 teaspoonsbutter
2small onions, chopped
2 tablespoonsfresh lemon juice
2 clovesgarlic, crushed
1/2 cupdry white wine
to tastesalt
to tastefreshly ground black pepper
1 teaspoonfresh chives, cut into 1/2 inch pieces
1 package (8 ounces)BARILLA Porcini Mushroom Tortelloni


BRUSH salmon fillet with 1 tablespoon of olive oil. Season with salt & pepper to taste.
GRILL under broiler until cooked (center should be opaque). Set aside
MELT butter in a wide, shallow pan and add onion. Saute onion until brown.
ADD lemon juice, garlic, white wine, and salt to taste. Simmer lightly.
COOK Tortelloni according to package directions.
ADD cooked and drained Tortelloni to sauce. Gently toss in chunks of cooked salmon. Garnish with fresh chives. Serve immediately
