Polenta Cake with Lemon and Fresh Berries

Ingredients

to cover pancooking spray
1 cup + 2 tablespoonssugar
2 tablespoonswater
1 cupblueberries
2 cupshalved strawberries
2 teaspoonslemon juice
1-1/4 cupsall-purpose flour
1/2 cuppolenta, dry
1/2 teaspoonbaking soda
1/4 teaspoonsalt
2 1/2 teaspoonsgrated lemon rind
2 largeeggs
1/4 cupolive oil
2/3 cupbuttermilk, reduced fat


PREHEAT oven to 350 degrees.
COMBINE sugar, water, berries and lemon juice in a saucepan.
SIMMER over low heat for 5 minutes. Set aside
SPRAY an loaf pan lightly with cooking spray.
COMBINE flour, cornmeal, baking soda, sugar, salt and lemon rind in a large bowl.
BEAT eggs in a medium bowl and slowly mix in olive oil. Alternate adding in buttermilk and flour mixture until all incorporated. Pour batter in loaf pan.
BAKE at 350 degrees for 50 minutes to 1 hour or until top springs back after touching.
Cool for 10 minutes before slicing, Top slices with fresh berries
