Pipette with Garden Vegetable Sauce, Mushrooms, and Sautéed Onion (Pipette con Sugo Di Verdure Barilla, Funghi e Cipolle)

Ingredients

1 boxBARILLA Pipette
1 jarBARILLA Garden Vegetable Sauce
3 tablespoonsextra virgin olive oil, divided
1white onion, julienne
1 pintmixed wild mushrooms, sliced
1 cupPecorino Romano cheese, grated
to tastesalt
to tastefrshly ground black pepper
2 tablespoonsfresh parsley, chopped


BRING a large pot of water to a boil.
ADD 2 tablespoons of oil to a preheated medium skillet and sauté over medium-high heat.
ADD the onion and sauté for 4 minutes; season with salt and pepper. Turn the heat down to medium and add the mushrooms. Sauté for 3 minutes, or until lightly browned.
ADD the Garden Vegetable Sauce and bring to simmer, about 2 minutes; continue to simmer for about 8 minutes or until the desired consistency is reached.
Meanwhile COOK Pipette according to the package directions.
SEASON the sauce with salt and pepper.
DRAIN and toss the Pipette with the sauce. Finish the sauce with the parsley, grated cheese and remaining oil. Serve immediately
