Piccolini® Mini Penne with Ham, Peas and Parmigiano Cheese

Cook time: 9 minutes

Ingredients

1 boxPiccolini® Mini Penne
3 tablespoonsextra virgin olive oil
3 tablespoonsshallots, minced
2 cupsfrozen green peas
1 cupham, julienne
to tastesalt
to tastefreshly ground black pepper
½ cupParmigiano cheese, grated


HEAT oil in a medium skillet over medium high heat for 2 minutes.
ADD the shallot and sauté until soft, and slightly browned, about 3 minutes
Meanwhile COOK the Piccolini Mini Penne according to the directions on the package.
ADD the ham and continue to sauté for an additional 2 minutes.
ADD the peas, sauté for an addition 4 minutes, season with salt and pepper.
DRAIN the pasta and toss with the sauce. Remove from heat and toss in the cheese and serve
