Piccolini® Mini Penne with Turkey, Peas and Tomato

Ingredients

1 boxPiccolini® Mini Penne
3 tablespoonsextra virgin olive oil
1 smallleeks, diced white part only
1 pintgrape tomatoes, halved
½ cupfrozen peas
6 ouncesturkey breast
to tastesalt
to tastefreshly ground black pepper


HEAT oil and leeks in a medium skillet over medium heat. Sauté for 2 minutes until the leeks start to change color.
ADD the tomatoes, peas, and turkey. Sauté for 5 minutes, until the tomatoes have released some liquid and the skins have blistered.
Meanwhile COOK the Piccolini Mini Penne according to the packaged directions. Drain the pasta and toss with the sauce, season with salt and pepper. Serve
