Piccolini® Mini Fusilli with Green Peas Cream, Cherry Tomatoes and Mozzarella Cheese
Piccolini® Mini Fusilli con Crema di Piselli, Pomodorini e Mozzarella

Ingredients

1 boxPiccolini® Mini Fusilli
2 tablespoonsextra virgin olive oil
1 tablespoonwhite onion, chopped fine
1 package (16 ounces)green peas, frozen
1 cupvegetable broth or water
to tastesalt
to tastewhite pepper
2 cupsmozzarella cheese, shredded


HEAT oil in a medium skillet over medium high heat. Add onions and sauté for 5 minutes over low heat.
ADD peas, broth and simmer for 5 minutes.
ADD the tomatoes and cook until they are warmed through and the skins are slightly blistered.
Meanwhile COOK Piccolini® Mini Fusilli according to package directions. Drain and toss with the sauce. Season with salt and pepper. Finish with the mozzarella cheese before serving.
