Piccolini® Mini Farfalle with Green Peas Cream, Cherry Tomatoes and Mozzarella Cheese

Ingredients

1 boxPiccolini® Mini Farfalle
2 tablespoonsextra virgin olive oil
1 tablespoonwhite onion, chopped
1 package (9 ounces)green peas, frozen
to tastesalt
to tastewhite pepper
2 cupsmozzarella cheese, shredded


HEAT oil in a large skillet. Add onions and sauté for five minutes over low heat.
ADD peas, vegetarian broth and simmer for five minutes.
PROCESS mixture in a blender until smooth and creamy. Return to the skillet and add tomatoes. Season with salt and pepper, simmer two minutes
Meanwhile Cook Piccolini Mini Farfalle according to package directions.Drain and toss with the sauce.
GARNISH with mozzarella cheese before serving
