Penne with Three Peppers and Chicken Breast (Penne ai Tre Peperoni e Petto di Pollo)

Ingredients

1/3 cupextra virgin olive oil, divided
1 poundchicken breast, boneless, skinless, cut into strips
to tastesalt
to tastefreshly ground black pepper
2 cupslarge white onion, cut into strips
2 sprigs, dividedfresh thyme
1 medium (1 cup)green pepper, diced into 1/2 inch pieces
1 medium (1 cup)red pepper, diced into 1/2 inch pieces
1 medium (1 cup)yellow pepper, diced into 1/2 inch pieces
1 cupwater
1 box (16 ounces)BARILLA Penne
2 tablespoonsItalian flat-leaf parsley, chopped


BRING a large pot of water to a boil.
HEAT 1 tablespoon olive in a large skillet over medium heat. Add chicken; season with salt and pepper to taste. Saute until chicken is cooked through. Remove chicken from skillet and set aside.
ADD remaining olive oil to skillet and heat over medium high heat. Add onions and 1 sprig of fresh thyme. Saute 5 minutes.
ADD peppers and water. Saute an additional 10 minutes or until peppers are tender.
COOK pasta according to package directins. Drain and add to skillet. Add chicken to skilltet and toss.
SPRINKLE with chopped parsley and serve
