| 1 box | BARILLA Penne |
| 1/4 cup | extra virgin olive oil, divided |
| 2 cups (1 medium) | red onion, thinly sliced |
| 2 cups (1 pint) | cherry tomatoes, cut in half |
| 1-1/2 cups (8 ounces) | fresh mozzarella cheese, diced |
| 8 leaves | fresh basil, thinly sliced |
| to taste | freshly ground black pepper |
| 1/3 cup | Parmigiano cheese, freshly grated |
BRING a large pot of water to a boil.
HEAT half of the olive oil in a large skillet. Add onions and sauté over medium heat until soft.
ADD tomatoes to skillet and cook five minutes or until tomatoes are heated through.
COOK pasta according to package directions. Drain and toss with sauce.
ADD mozzarella cheese, basil and black pepper.
DRIZZLE with remaining oil. Sprinkle with Parmigiano cheese and serve.
