Penne with Lobster and Fried Zucchini (Penne con Astice e Lucchine)

Ingredients

2 (8 to 9 ounces each)fresh or thawed frozen lobster tails
1/2 cupextra virgin olive oil, plus more if needed
1 clovegarlic, lightly crushed
1/2 cupdry white wine
1 poundripe tomatoes, seeded and diced
to tastesalt
a small pinchdried red chile pepper (optional)
5 medium (about ¾ pound)zucchini, ends trimmed and cut into small cubes
1 tablespooncoarse salt
1 box (16 ounces)BARILLA Penne


CUT the shells of the lobster tails in half down the underside of the tail with a large knife or poultry shears. Grasping the cut shells with a kitchen towel, pry them open and remove the meat. Cut it into ¼ inch diced pieces.

HEAT about half of the oil in a large skillet over medium heat. Add the garlic and cook until it is golden brown on all sides, then discard it. Add fresh or frozen lobster and stir until lightly golden, 1 to 2 minutes. Scoop out the lobster with a slotted spoon and transfer to a bowl.

ADD the wine and stir to release the browned bits attached to the bottom of the skillet. When almost all the wine has evaporated, add the tomatoes, season with salt and the chile pepper, if using, and stir until the tomato juices begin to thicken, 3 to 4 minutes. Return the lobster to the skillet, stir once or twice, and turn off the heat.

HEAT the remaining oil in a medium skillet over high heat. When the oil is hot, add the zucchini and cook until golden brown and a bit crisp, 2 to 3 minutes. With a slotted spoon, transfer the zucchini to paper towels to drain.

MEANWHILE, bring a large pot of water to a boil over high heat. Add the coarse salt and pasta and cook until the pasta is tender but still firm to the bite.
PLACE the skillet of sauce over medium heat. Scoop out and reserve almost ½ cup of the pasta cooking water. Drain the pasta and add it to the sauce. Season lightly with salt. Add the fried zucchini and mix quickly until the pasta and sauce are well combined. If the sauce seems a bit dry, stir in a bit of the pasta cooking water or some olive oil. Taste, adjust the seasoning, and serve at once
