Penne with Italian Sausage and Green Peas (Penne con Salsiccia e Piselli)

Ingredients

1 poundItalian sausage, crumbled
2 tablespoonsextra virgin olive oil
1 clovegarlic, chopped
1/2 cupdry white wine
1/2 cuptomato paste
2 cupswater
to tastesalt
to tastefreshly ground black pepper
2 cupsgreen peas
1 box (16 ounces)BARILLA Penne
1/2 cupParmigiano cheese, grated


BRING a large pot of water to a boil.
SAUTE garlic in a skillet with the oil until it turns light yellow.
ADD the crumbled sausage, sauté it until brown. Deglaze with the wine and evaporate it well by simmering for 3-5 minutes.
ADD tomato paste water, salt and pepper and simmer for ten minutes. Stir in the frozen green peas, simmer for fifteen minutes more.
COOK pasta according to package directions; drain and toss with the sauce.
SPRINKLE with grated cheese before serving
