| 1 | red bell pepper |
| 1 tablespoon | white onion, chopped |
| 1 tablespoon | extra virgin olive oil |
| 1 package (16 ounces) | green peas, frozen |
| 1 cup | Half & half |
| to taste | salt |
| to taste | freshly ground black pepper |
| 1/2 cup | Parmigiano cheese, grated |
BRING a large pot of water to a boil.
ROAST the red pepper over a flame on stove burner. When the skin is evenly browned, place it in a zip type bag to cool. Peel, remove seeds and cut into small cubes.
SAUTE chopped onion with olive oil in a large skillet for three minutes.
ADD peas, peppers and sauté two additional minutes. Add half and half, season with salt and pepper.
COOK pasta according to package directions. Drain and add to skillet. Toss with the sauce and cheese.
