Penne with Creamy Tomato Sauce, Broccoli and Mozzarella Cheese

Ingredients

1 boxBARILLA Penne
1 can (28 ounces)Italian peeled tomatoes
1/4 cupextra virgin olive oil
1 clovegarlic
2 cupsbroccoli florets
to tastesalt
to tastefreshly ground black pepper
10 leavesfresh basil, chopped
8 ouncesfresh mozzarella cheese, diced


BRING a large pot of water to a boil.
HEAT olive oil in a large skillet. Sauté the garlic until golden.
ADD tomatoes and broccoli florets. Season with salt and pepper. Simmer for five minutes or until broccoli is tender.
BLEND mixture in a food processor until smooth.
COOK pasta according to directions. Drain and toss with the sauce.
MIX in diced mozzarella cheese and chopped basil.
