Pancetta Wrapped Pork Tenderloin with Mushroom and Garlic Sauce (Finetti di Maiale Avvolti Nella Pancetta con Salsa Boscaiola)

Ingredients

8 slicespancetta, thinly sliced
2 whole (6 ounces each)pork tenderloins
2 tablespoonsextra virgin olive oil
1 jarBARILLA Mushroom & Garlic Sauce
1/2 cupdry red wine


WRAP tenderloin by laying 4 pancetta slices side by side and over lapping.
Roll slices around tenderloin tightly. Repeat with remaining slices and other tenderloin.
HEAT 1 tablespoon olive oil in a skillet over high heat. Add the pork and sear until golden brown on all sides about 7 minutes. Remove and transfer to a baking pan.
ADD Sauce to skillet; stir in red wine and heat to a simmer.
POUR sauce over pork tenderloins and bake in 400 degree oven for 20 minutes or until pork is cooked through
