PLUS® Rotini Salad

Ingredients

1 boxPLUS® Rotini
3 tablespoonsextra virgin olive oil, divided
1 cupzucchini, cut into small cubes
½ cupcarrots, cut into small cubes
1 cupcorn (may use canned or frozen)
2 cups (½ pound)grape tomatoes, halved
2 leavesfresh basil, julienne
to tastesea salt
to tastefreshly ground black pepper
2 cups (½ pound)mozzarella cheese, shredded


SAUTE zucchini and carrots in half of the olive oil; season with salt and pepper. Set aside and to cool down.
STIR in the corn, tomatoes, basil, and 1 tablespoon of oil. Allow mixture to marinate for 1 hour.
COOK PLUS® Rotini 1 minute less than according to the package directions.
DRAIN and drizzle with the remaining oil. Transfer pasta to a sheet pan and allow to cool.
COMBINE and toss PLUS%u2122 Rotini with the vegetables and mozzarella cheese before serving.
