| 1 box | PLUS® Rotini |
| 3 tablespoons | extra virgin olive oil, divided |
| 1 cup | zucchini, cut into small cubes |
| ½ cup | carrots, cut into small cubes |
| 1 cup | corn (may use canned or frozen) |
| 2 cups (½ pound) | grape tomatoes, halved |
| 2 leaves | fresh basil, julienne |
| to taste | sea salt |
| to taste | freshly ground black pepper |
| 2 cups (½ pound) | mozzarella cheese, shredded |
SAUTE zucchini and carrots in half of the olive oil; season with salt and pepper. Set aside and to cool down.
STIR in the corn, tomatoes, basil, and 1 tablespoon of oil. Allow mixture to marinate for 1 hour.
COOK PLUS® Rotini 1 minute less than according to the package directions.
DRAIN and drizzle with the remaining oil. Transfer pasta to a sheet pan and allow to cool.
COMBINE and toss PLUS%u2122 Rotini with the vegetables and mozzarella cheese before serving.
