PLUS® Farfalle with a Chicken and Roasted Vegetable Ragu

Ingredients

1 boxPLUS® Farfalle
5 tablespoonsolive oil
2 clovesgarlic, chopped
1/2 eachzucchini, sliced
1/2 eachyellow squash, sliced
1 largeportabella mushroom, sliced
1/2 poundground chickem
1 tablespoondried oregano
1 cupvegetable broth
to tastesalt
to tastefreshly ground black pepper


PREHEAT oven to 400 degrees. Bring a large pot of salted water to a boil.
MIX 3 tablesppons of olive oil and 1 clove of garlic with the sliced vegetables. Place on a baking tray and roast in the oven until tender.
HEAT remaining garlic and oil in a skillet and saute until the garlic is slightly yellow.
ADD oregano and ground chicken. Brown well. Deglaze the pan with the vegetable broth and conintue cooking until liquid is reduced by half. Season with salt and pepper to taste.
COOK PLUS® Farfalle according to the package directions.
ADD roasted vegetables to the chicken and mix well.
TOSS drained pasta with the sauce mixture and serve.
