Nicoise-Style Salad (Insalata Nizzarda)

Ingredients

1 poundfresh tuna steak, cut in 1 inch cubes
1 box (16 ounces)PLUS™ Penne
8 ouncesfresh green beans, cut in 1 inch pieces
1 pintgrape tomatoes, cut in halves
1/2 cupKalamata olives, cut in halves
1yellow pepper, thinly sliced
1/2 cupextra virgin olive oil, divided
1/4 cupred wine vinegar
to tastesalt
to tastefreshly ground black pepper
1 tablespooncapers
1 tablespoonItalian parsley, chopped
1 tablespoonfresh basil, chopped


BRING a large pot of water to a boil.
COOK pasta one minute under recommended cooking time. Add green beans during last 4 minutes of cooking time. Drain and spread on baking sheet to cool.
HEAT 1 tablespoon olive oil in a small pan. Add tuna; season with salt and pepper. Sauté until cooked through. Set aside to cool.
MIX vinegar into mustard in a large bowl. Whisk in olive oil. Add garlic, basil, and parsley. Season with salt and pepper.
ADD pasta and green beans. Add olives, pepper, tomatoes, tuna and capers. Mix well.
REFRIGERATE at least 2 hours before serving
