Mini Ziti with Roasted Asparagus and Balsamic Vinegar (Mini Ziti con Asparagi ed Aceto Balsamico)

Ingredients

1/2 cupwalnut pieces
3 cups (1 pound)asparagus spears, trimmed and chopped
1/3 cupextra virgin olive oil, divided
2 teaspoonssalt, divided
1/4 teaspoonfreshly ground black pepper, divided
2/3 cupbalsamic vinegar
1/2 teaspoonlight brown sugar
1 box (16 ounces)BARILLA Mini Ziti
1/3 cupfresh Parmigiano cheese, grated


TOAST walnuts in skillet over medium heat 4 to 5 minutes or until browned, stirring occasionally. Remove from skillet; set aside.
PREHEAT oven to 400°. Toss asparagus with 1 tablespoon olive oil, ¼ teaspoon salt and ¼ teaspoon pepper. Place on cookie sheet; bake 10 minutes or until tender.
PLACE vinegar in small saucepan over medium-high heat; simmer 8 to 10 minutes until reduced to about ¼ cup. Stir in brown sugar and remaining ¼ teaspoon pepper.
COOK Mini Ziti according to package directions; drain and return to pot.
ADD remaining ¼ cup olive oil, vinegar mixture, asparagus, cheese, and remaining 1-3/4 teaspoons salt; toss. Transfer to serving platter. Makes 4 to 6 servings



Garnish with additional grated or shaved Parmesan cheese.
