Mini Ziti with Radicchio and Leek Sauce (Mini Ziti con Salsa di Radicchio e Porri)

Ingredients

1 jarBARILLA Marinara Sauce
1 box (16 ounces)BARILLA Mini Ziti
1 cupbeef stock (may substitute veal stock for beef stock)
4 tablespoonsbutter
1 cupchopped onion
1/2 cupchopped parsley
1/3 cupextra virgin olive oil
2 large (8 ounces)leeks, chopped
1 head (12 ounces)radicchio, chopped


HEAT oil in large skillet over medium heat.
ADD onion and saute 3 to 4 minutes or until tender, stirring occasionally.
ADD radicchio and leeks; cook 5 minutes or until tender, stirring occasionally.
ADD Marinara Sauce, beef stock, parsley and butter. Simmer for 20 minutes, stirring occasionally.
COOK Mini Ziti according to package directions; drain and return to pot.
ADD Marinara mixture; toss. Transfer to serving platter
