Mezze Penne with Tomatoes and Mozarella Cheese (Mezze Penne con Pomodoro e Mozzarella)

Ingredients

1 boxBARILLA Mezze Penne
2 tablespoonsextra virgin olive oil
1 smallshallot, chopped
1 clovegarlic, minced
2 cupsplum tomatoes, chopped
2 cupsfresh basil leaves
2 teaspoonssalt
1 cupfresh mozzarella cheese, diced


HEAT oil in large skillet over medium-high heat. Add shallot and garlic; sauté until tender, stirring occasionally.
STIR in tomatoes, basil and salt; continue cooking for 3 minutes.
COOK Mezze Penne according to package directions; drain and return to pot.
ADD fresh tomato sauce and cheese to hot Mezze Penne; toss. Transfer to serving platter



Substitute ¼ cup chopped onion for shallot.
