Mezze Penne with Shrimp and Butternut Squash (Mezze Penne con Gamberi e Zucca)

Ingredients

1 boxBARILLA Mezze Penne
2 tablespoonsextra virgin olive oil
4 cups (4 small)yellow squash, cut into small cubes
3 cups (2 medium)zucchini, cut into small cubes
1 poundmedium shrimp, peeled, de-veined
1 tablespoonfresh basil leaves, chopped
1 tablespoonfresh oregano
2 clovesgarlic, minced
1/2 teaspoonsalt
1/4 teaspoonfreshly ground black pepper
1/4 cupthinly sliced onion (may substitute fresh chives)
1/4 cupParmigiano cheese, grated


HEAT oil in large non-stick skillet over medium-high heat. Add squash and zucchini; sauté 6 minutes or until tender, stirring occasionally.
ADD shrimp and continue cooking 3 minutes. Add basil, oregano, garlic, salt and pepper; stir for 2 minutes or until shrimp are cooked.
COOK Mezze Penne according to package directions; drain and return to pot.
ADD shrimp mixture to hot Mezze Penne; toss. Transfer to serving platter; sprinkle with green onion and cheese
