Medium Shells with Smoked Salmon and Fennel (Conchiglie con Salmone Affumicato e Finocchio)

Ingredients

1 boxBARILLA Medium Shells
3 tablespoonsextra virgin olive oil
1-1/3 cups (1 medium)white onion, thinly sliced
3 cups (1 bulb)fennel, thinly sliced
to tastesalt
to tastefreshly ground black pepper
1 cup (4 ounces)smoked salmon fillet, flaked
2 tablespoonschives, chopped


BRING a large pot of water to a boil.
HEAT olive oil in a large skillet. Add onions and sauté 8 minutes or until golden.
ADD fennel and season with salt and pepper. Sauté until tender or about 8 minutes.
Add smoked salmon and set skillet aside.
COOK pasta according to package directions. Drain and add pasta to sauce. Mix well.
Sprinkle with chives before serving
