Linguine with Walnut Pesto and Shrimp (Linguine con Pesto alle Noci e Gamberi)

Ingredients

1 cupwalnuts, coarsely chopped, divided
1/2 cup + 2 tablespoonsextra virgin olive oil
2 smallpepperoncini, seeded, chopped
2 clovesgarlic
1 cupfresh basil leaves
1/3 cupItalian parsley
1/4 cupfresh mint leaves
1 poundmedium shrimp, peeled and deveined
1 box (16 ounces)BARILLA Linguine
2 (1/2 cup)plum tomatoes, chopped
1 teaspoonsalt
1/2 teaspoonfreshly ground black pepper


COMBINE ½ cup walnuts, ½ cup oil, pepperoncini and garlic in blender. Mix on low speed, scraping sides with rubber spatula.
ADD basil, parsley and mint; mix until blended and set aside.
HEAT remaining oil in large skillet over medium heat. Add shrimp; cook 4 to 5 minutes or until shrimp is cooked, stirring occasionally.
COOK Linguine according to package directions. Drain, reserving ½ cup pasta water. Return pasta to pot.
ADD pesto, reserved pasta water, salt and pepper to hot Linguini; toss. Stir in shrimp. Transfer to serving platter; top with tomatoes and remaining walnuts



Sprinkle with freshly grated Parmigiano cheese.
