Linguine Fini with Walnuts and Gorgonzola Cheese (Linguine Fini con Noci e Gorgonzola)

Ingredients

3 tablespoonschopped walnuts, divided
2 tablespoonsextra virgin olive oil
2 clovesgarlic, minced
1-1/4 cupmilk
2 ouncescream cheese
1/2 teaspoonsalt
1/2 box (8 ounces)BARILLA Linguini Fini
1 pound (3 cups)asparagus, trimmed and sliced diagonally
1/2 cup (2 ounces)gorgonzola cheese


TOAST walnuts in skillet over medium heat 4 to 5 minutes or until browned, stirring occasionally. Remove from skillet; set aside.
HEAT oil in large skillet over medium heat. Sauté garlic 1 minute. Gradually whisk in milk, stirring about 2 minutes. Add cream cheese and salt, stirring constantly until cream cheese is melted. Remove from heat.
COOK Linguine Fini according to package directions, adding asparagus during last 2 minutes of cook time; drain.
ADD Linguine Fini with asparagus to skillet; stir over medium-high heat for 2 minutes.
STIR in Gorgonzola cheese and 2 tablespoons walnuts until thoroughly heated. Transfer to serving platter; sprinkle with remaining walnuts



Substitute blue cheese for Gorgonzola cheese.
