Green Beans Salad with Fresh Tomatoes, Balsamic Vinegar and Shaved Parmigiano

Ingredients

1 poundgreen beans, fresh
1 poundripe plum tomatoes
3 tablespoonsextra virgin olive oil
1 tablespoonbalsamic vinegar
to tastesalt
to tastefreshly ground black pepper
1 cupParmigiano cheese, shaved


MIX vinegar with oil, salt and pepper.
BLANCH the tomatoes in boiling water for ½ minute and cool down in a bath of water with ice. Peel tomatoes and remove seeds. Cut into medium dice
BOIL the green beans three minutes in salted water and cool down in ice and water.
MIX green beans with chopped tomatoes, season with the balsamic dressing and top with the cheese before serving.
