Gemelli with Vegetables and Parmesan (Gemelli con Verdure e Parmigiano)

Ingredients

1/2 boxBARILLA Gemelli
2 tablespoonspine nuts
2 tablespoonsextra virgin olive oil
1garlic clove, minced
1 mediumzucchini, cut into julienne strips
2 mediumcarrots, cut into julienne strips
1/2 cupParmigiano-Reggiano cheese, freshly grated
1/2 teaspoonsalt
1/8 teaspoonpepper


TOAST pine nuts in large skillet over medium heat 4 to 5 minutes or until golden brown. Remove from skillet; set aside.
HEAT oil in skillet over medium-high heat. Stir in garlic; cook 30 seconds. Add zucchini and carrots; sauté 6 to 7 minutes or until crisp-tender. Stir in pine nuts; remove from heat.
MEANWHILE cook Gemelli according to package directions; drain and return to pot.
ADD cooked vegetable mixture and remaining ingredients to hot Gemelli; toss. Transfer to serving platter. Makes 4 servings
