Gemelli with Tuscan Pecorino Cheese and Aromatic Herbs (Gemelli con Pecorino Dolce ed Erbe Aromatiche)

Ingredients

5 tbsp.extra virgin olive oil
3 tbsp.chopped fresh herbs (rosemary, sage, parsley,mint, thyme, marjoram, etc)
1 clovegarlic, minced
1 (16 oz.) boxBARILLA Gemelli
5 tbsp.grated Pecorino Romano cheese
1 tbsp.unsalted butter
1/4 tsp.freshly ground black pepper
5 tbsp.grated Tuscan Pecorino cheese


HEAT oil in large skillet over medium heat. Add herbs and garlic; sauté for 1 minute, stirring constantly.
COOK Gemelli according to package directions reducing cook time to 10 minutes. Drain pasta, reserving 1/4 cup cooking water. Return pasta to pot.
ADD hot pasta and reserved cooking water to the herb mixture; toss. Cook until water evaporates slightly, stirring occasionally.
ADD cheese, butter and pepper; mix well. Transfer to serving platter; serve immediatel
