Gemelli with Three Cheese Sauce and Eggplant (Gemelli con Salsa ai Formaggi e Melanzane)

| 1 jar | BARILLA Three Cheese Sauce | | 1 1/4 cup | eggplant, diced | | 1 1/2 teaspoon | fresh basil, chopped | | 1/2 cup | water | | 2 | extra virgin olive oil | | 1 box (16 ounces) | BARILLA Gemelli | | 1/2 cup | fresh tomatoes, diced |
COMBINE Italian Cheese Sauce, eggplant, water and olive oil in a medium saucepan. Simmer over low heat for 10 minutes or until egplant is tender. COOK pasta according to package directions. Drain TOSS pasta with the sauce. Add basil. Garnish with diced tomatoes
