Gemelli with Four Cheeses (Gemelli ai Quattro Formaggi)

Ingredients

3/4 cup (3 ounces)fontina cheese, shredded
3/4 cup (3 ounces)gorgonzola cheese, crumbled
1/3 (1 ounce)Parmigiano Reggiano cheese, grated
1/3 cup (1 ounce)Pecorino Romano cheese, grated
1/2 cupheavy cream
1 box (16 ouncesBARILLA Gemelli
to tastefreshly ground black pepper
2 tablespoonsItalian flat leaf parsley, chopped


BRING a large pot of water to a boil.
POUR heavy cream into a large skillet over medium heat. Add the cheeses and simmer until they are melted, about 5 minutes. Set aside.
ADD pasta to boiling water. Cook according to package directions.
DRAIN pasta. Immediately add hot pasta to skillet and mix well.
TRANSFER to a serving platter or bowl. Garnish with chopped parsley and black pepper to taste and serve



Sprinkle with freshly grated Parmigiano cheese.
