Gemelli with Chicken and Roasted Pepper Sauce (Gemelli con Pollo e Peperoni Arrostiti)

Ingredients

1 boxBARILLA Gemelli
1/3 cupextra virgin olive oil, divided
2 clovesgarlic
5 each (3 cups)roasted red peppers
1 cupchicken broth
1 poundchicken breast, thinly sliced
1/2 poundgreen beans, cut in 1-inch pieces
1 sprigfresh thyme
1 tablespoonbalsamic vinegar


RING a large pot of water to a boil.
HEAT 2 tablespoons olive oil in a medium skillet. Add garlic. Saute until golden.
ADD roasted peppers, thyme and chicken broth. Simmer for 5 minutes. Remove from heat; discard thyme and set skillet aside.
HEAT remaining oil in a large skillet. Sauté chicken until golden and cooked through. Set aside.
PROCESS pepper sauce in a blender until smooth. Add balsamic vinegar and season with salt and pepper to taste.
COOK pasta according to package directions. Add green beans to last 5 minutes of cooking. Drain.
ADD sauce to skillet. Heat through. Add hot pasta to sauce. Mix well
