Fiori Pasta Salad

Ingredients

1 box BARILLA Fiori
2 medium, dicedeggplant
to tastesalt
to tastefreshly ground black pepper
1/3 cupextra virgin olive oil, divided
1 mediumred bell pepper, diced
1 bunchscallions (white part only), chopped
2 tablespoonsfresh basil, chopped
1 tablespoonfresh oregano, chopped
1fresh lemon, juice of
8 ouncespressed ricotta cheese, crumbled


SPRINKLE eggplant with salt. Allow to drain in a colander for 30 minutes.
BRING a large pot of water to a boil.
COOK pasta one minute under package directions. Drain. Spread on a baking sheet to cool.
HEAT half of the remaining olive oil in a large
MIX all ingredients in a large bowl. Season with salt and pepper. Refrigerate for 1 hour before serving.
