Fettuccine Rigate with Tomato and Basil Sauce and Zucchini (Fettuccine Rigate con Salsa al Pomodoro e Basilica con Zucchine)

Ingredients

1 box (14 ounces)BARILLA Fettuccine Rigate
1 jarBARILLA Tomato & Basil Sauce
3 tablespoonsextra virgin olive oil
2 cups (1 medium)white onion, chopped
4 cups (3 medium)zucchini, diced
to tastefreshly ground black pepper
1/3 cupParmigiano cheese, grated


TOSS zucchini with salt. Drain in colander for 30 -60 minutes.
HEAT olive oil in a large skillet. Add onions and sauté until golden.
ADD zucchini and sauté until tender.
ADD sauce and simmer 5 minutes.
COOK pasta according to package directions. Drain and add pasta to sauce. ADD cheese. Mix well. Sprinkle with freshly ground black pepper
