Farfalle with Lamb and Smoked Mozzarella (Farfalle con Agnello e Mozzarella Affumicata)

Ingredients

1 box (16 oz.)BARILLA Farfalle
1/4 cupextra virgin olive oil
2 cupsmeat of lamb leg (about 12 ounces), cut into ¼-inch cubes
1/2 cupchopped onion
1garlic clove, minced
1/8 tspcumin
1/3 cupwhite wine
1 jar (17 oz)BARILLA Restaurant Creations Sugo alla Romana
1/2 cuphot water, divided
10large leaves basil, coarsely chopped
7-1/2 ozsmoked mozzarella cheese, cut into small cubes
1/3 cupfreshly grated Parmigiano cheese


HEAT oil in large skillet over medium heat. Add lamb; cook 5 to 8 minutes or until browned, stirring occasionally. Add onion, garlic, and cumin; cook about 3 minutes, or until onion is tender. Add wine; continue cooking about 10 minutes or until wine is completely reduced.
STIR in rosemary and both jars of Restaurant Creations. Rinse each jar with ¼ cup hot water to remove all sauce, and stir into skillet. Bring to a simmer; add basil.
COOK Farfalle according to package directions. Drain and return to pot.
ADD sauce to hot Farfalle; toss. Stir in mozzarella cheese; continue cooking until thoroughly heated. Transfer to serving platter or bowl; sprinkle with Parmigiano cheese



Substitute 1 teaspoon dried rosemary leaves for fresh.
