Cheese and Garlic Tortelloni with Vegetable Sauce (Tortelloni al Formaggio ed Aglio con Verdure Fresche)

Ingredients

1 packageBARILLA Cheese & Garlic Tortelloni
2 tablespoonsextra virgin olive oil
1 clove (1/4 teaspoon)garlic, minced
1red pepper, cut into 1/2 inch strips
1carrot, peeled, cut into 1/2 inch strips
1zucchini, cut into 1/2 inch strips
1/2medium onion, diced
1/4 cupwater
to tastesalt
to tastefreshly ground black pepper
3 tablespoonsParmesan cheese, grated


BRING a large pot of water to a boil.
HEAT olive oil in a large skillet over medium heat. Add garlic and saute for e minutes. Add cut vegetables and saute for approximately 8-9 minutes, stirring occasionally.
ADD water to skillet; seasdon with salt and pepper.
COOK Tortelloni according to package directions. Drain and combine with sauce mixture.
ADD cheese; mix well and serve
