| 1 package | BARILLA Three Cheese Tortellini |
| 2 tablespoons | extra virgin olive oil |
| 1 clove (1/4 teaspoon) | garlic, minced |
| 1 | red pepper, cut into 1/2 inch strips |
| 1 | carrot, peeled, cut into 1/2 inch strips |
| 1 | zucchini, cut into 1/2 inch strips |
| 1/2 | medium onion, diced |
| 1/4 cup | water |
| to taste | salt |
| to taste | freshly ground black pepper |
| 3 tablespoons | Parmesan cheese, grated |
BRING a large pot of water to a boil.
HEAT olive oil in a large skillet over medium heat. Add garlic and saute for e minutes. Add cut vegetables and saute for approximately 8-9 minutes, stirring occasionally.
ADD water to skillet; seasdon with salt and pepper.
COOK Tortellini according to package directions. Drain and combine with sauce mixture.
ADD cheese; mix well and serve.
