Cheese and Spinach Tortellini with Zucchini and Prosciutto
Tortellini con Zucchini e Prosciutto di Parma

Ingredients

1 package (family size)BARILLA Cheese & Spinach Tortellini
1 pound (3 medium)zucchini
to tastesalt
1/4 cupextra virgin olive oil
2 tablespoonswhite onion, chopped
4 ouncesprosciutto di Parma, sliced thin and cut into strips
1/2 cupParmigiano cheese, freshly grated


BRING a large pot of water to a boil.
CUT zucchini into thin slices; season with salt and let drain in a colander for 1 hour.
HEAT oil in a large skillet over medium heat. Add onion and zucchini. Saute for 5 minutes or until zucchini is desired tenderness.
ADD prosciutto and saute an additional 2 minutes.
COOK pasta according to package directions. Drain and add to zucchini mixture.
TRANSFER to a serving platter or bowl. Sprinkle with cheese and serve.
